Black Beans

These beans are a great side dish for any Mexican entree such as Enchiladas, Quesadilla, or basic tacos. Note, they don’t actually need rice.

Ingredients

  • 1 (15 oz) can black beans

  • 1 (4 oz) can diced jalapenos

  • 1 half yellow onion

  • 2 tsp garlic powder

  • 1 tsp salt (if beans are salt free)

  • 1 tsp pepper

  • 1 tsp cumin

  • 3 Tbsp cilantro (coarse chop)

Directions

  • Chop onion.

  • Combine all ingredients except cilantro in small sauce pan. Do not drain the beans.

  • Raise to simmer and let simmer for 25 minutes.

  • Garnish with cilantro before serving.
